Welcome to the final Christmas celebration of the year! This was our little one's first ever Christmas - celebrated on Christmas day! We also dressed our two dogs in their Christmas gear - they look so cute! My youngest sister went on a Thailand expedition, so unfortunately we couldn't be a full house. My other sister, her husband and their precious little girl stayed over from the night before, so this Christmas morning we had a quick get together with them and my parents at our house. Since it was a morning get together, I decided to serve breakfast snacks, with an option of coffee, tea or whatever everyone felt like - almost a tradition in my childhood house! I couldn't make and bake everything I wanted to, so most of the food served were store bought, but I could at least boil eggs, make French toast and bake my delicious scones - again with assistance from my husband and sister, who did a fantastic job in baking it to perfection! The French toast were made out of a fresh French loaf, and my dear sister assisted with frying it deliciously. I added two different toppings, the first topping was whipped cream topped with fresh cut strawberries, and the second topping drizzled honey topped with crispy oven baked bacon strips. Bacon and French toast is one of my favourite snacks to eat!! The mini scones were cut into half and served with a choice of cheese, whipped cream, strawberry or fig jam. Strawberry jam and cream on these savoury scones is my absolute favourite - just the right amount of salt and sweet! And the breakfast continues.... I also served bacon and pork sausages, fried and cut, served with decorative fresh cherry tomatoes. You can never go wrong with a fresh element! Hard boiled eggs cut in half is an absolute must with breakfast snacks! The mini chicken barbeque pancakes was absolutely divine. I originally wanted to make mini quiches but the mini pancakes hit the right spot. Finally the sweet element - mini chocolate eclairs filled with cream! I love making these eclairs, fill with cream and caramel, and dip in chocolate. These ones I sadly had to buy, and it was very delicious, but of course, mine is better ;) ! After we were fully satisfied by all the breakfast snacks, the kids opened their presents - what a precious site. Afterwards, my sister, brother-in-law and niece left for their last Christmas get together with the in-laws. For Sunday lunch, I had these amazing plans to prepare the perfect Christmas lunch - brandied bacony chicken, pumpkin fritters, baked potato wedges, creamy spinach and a fresh salad. However, majority had to be store bought, but I think the items did do Christmas justice. We got a delicious chicken and mushroom pie, heated in the oven, creamy spinach, sweet potato fritters, my infamous pumpkin salad, consisting of roasted butternut, baby spinach leaves, feta cheese, pumpkin seeds and a handful of pecan nuts. Lastly we served freshly oven baked potato wedges - absolutely divine. It does not seem much, but it really filled our tummies, especially after all those breakfast snacks. For dessert I wanted to serve chocolate fondant with ice cream and strawberries, but yet again had to get a store bought dessert. I decided on a strawberry cheesecake. Before serving I added some crushed chocolate on top - no dessert should go without chocolate. This was really delicious, and another go-to store bought dessert, should I be prevented from making my own dessert.
